Dinner 11.4.09

It’s cleaning out the pantry time. Here is what we had for dinner tonight: bean enchiladas (there has to be a more specific name, but I don’t know it), peas and pineapple.

Cost*
frozen peas, $1.29
can of pineapple, $.99
corn tortillas, $1.79
dry beans, $.79
cheese, approx. $.50 (1/4 of a bag that cost $1.99)

Total cost for 6 people: $5.36 or roughly $.89 per person

We had beans with our pork chops last night. I’m glad I made extra because they were really good. For tonight’s sauce, I sauteed a spoonful of minced onion with a little garlic and a dried chile de arbol in oil. When the onions were tender, I removed the garlic and chile from the pan, leaving the flavored oil behind. In the food processor, I pureed the leftover beans along with some of the cooking liquid and then added it to the pan. I let the sauce simmer until slightly reduced but still thin. In another pan, I fried corn tortillas in hot oil for just a few seconds a side (enough to soften but not crisp them). I dipped each tortilla in the sauce and put it on the plate. Added cheese and onions (optional) and that’s it.

The kids LOVE this and all of them asked for seconds. Of course, it would be better with more fixin’s but this was a pre-grocery shopping dinner.

*I’m not including the cost of items like salt, oil, chile that I always have on hand.
